Another 'play in the kitchen day' last night at the crib. I'm trying to cut back on carbs (emphasis on trying)...So I decided to grill some Jerk chicken and throw it over a bed of bibb lettuce with a tomato shallot vinaigrette.

Jerk seasoning mix:

(Equal parts)

Onion Powder

Granulated Garlic


Red Pepper

Dried Thyme (I used powder and cut by half)




Salt and Pepper to taste

Have fun with your measurements to create a flavor you like ex: if you're not a fan of spicy, lighten up on red pepper.

I tossed a few chicken breasts with oil and the seasoning and marinated for an hour before grilling 4 min on each side and finished by baking them on a rack for 30 minute at 375.
